Not Your Mama's Taco Soup

Mexican-style soup with fresh flavors of lime, cilantro, roasted peppers, tomatoes, corn, and beans. Served with queso fresco to crumble on top of each serving. Spicy, tangy, savory and bold.... This is a meal you won't want to miss!


STOVE TOP -

Thaw meal overnight in the fridge or in warm water for 10-15 minutes before cooking. Add contents from the bag to a pot on the stovetop. Add water to the pot with the soup according to the serving size/increments below:

2 servings = 1 cup water

4 servings = 2 cups water

6 servings = 3 cups water


Turn stovetop heat to medium-high. Stir every 5 minutes for about 15-20 minutes until mixture is simmering. Lower heat and simmer for 10-15 min for fullest depth of flavor. Serve with queso fresco, sour cream, and a side of your favorite tortilla chips.



INSTANT POT -

Thaw meal overnight in the fridge or in warm water for 10-15 minutes before cooking. Add contents from the bag to Instant Pot.. Add water to the pot with the soup according to the serving size/increments below:

2 servings = 1 cup water

4 servings = 2 cups water

6 servings = 3 cups water


Pressure cook for 8 minutes on high. Quick release (depressurize) once done.

Serve with included queso fresco, sour cream and a side of your favorite tortilla chips.



CROCKPOT-

Add contents from the bag to the Crock Pot. Add water to the pot with the soup according to the serving size/increments below:

2 servings = 1 cup water

4 servings = 2 cups water

6 servings = 3 cups water


Cook for 3-4 hours on medium-high heat, stirring occasionally to combine.

Serve with included queso fresco, sour cream and a side of your favorite tortilla chips.

We never plan for anything to go wrong when you are cooking with our meals but we would like to help you should the unexpected happen. If you find anything not to your liking, please consider these tips to ensure success or to customize your meal more to your preferences:


*If your meal is too spicy: add 1/2 cup of chicken (or beef) broth, or water to dilute seasonings. Stir to combine and warm and serve as normal.


Another option is to add sour cream or plain greek yogurt to add creaminess and cool the spices down to your preference!
