A classic Italian combination - mozzarella cheese, tomatoes, and fresh basil - made into a delicious dinner for you to have at home with your family. Serve this with salad, garlic bread, your favorite pasta or Italian Rice (see recipe below) to complete this meal.
INSTANT POT - Place entire meal in an Instant Pot on high pressure for 14 minutes with 1/2 cup water. Allow a quick release and serve chicken whole, cut into medallions, or shredded
OVEN - Place entire meal in a deep baking dish and cover with tin foil. Bake at 375 degrees Fahrenheit for 60 minutes from frozen or 35-40 minutes from thawed. Always be sure to check the temperature of your chicken before serving, chicken should come to 165 degrees, internally. The last 10 minutes of baking, place extra mozzarella cheese over chicken breasts and allow to melt for optimal experience. You can also broil the cheese to melt quicker and get a bubbly exterior if desired.
Optional: add additional mozzarella cheese to mixture or serve on top of individual servings with fresh basil or a drizzle of balsamic glaze (found at most grocery stores in the condiments aisle).

Round Table Italian Rice
2 cups white rice
1 can evaporated milk
1-3/4 cups chicken broth
1 clove of minced garlic
1 TBS Zesty Italian seasoning
Combine in your Instant Pot and set to high pressure for 5 minutes. Allow to release pressure naturally. Fluff the rice with a fork and serve with all of your favorite Italian style meals!
